Who doesn’t love risotto? Here’s a healthy way in which you can enjoy your favourite dish! Low in calories, we promise it’s going to be just as tasty.
Ingredients
- 1 tsp olive oil
- 2 tsp garlic (lehsun) paste
- 1 onion (chopped)
- 1 chopped carrot (chopped)
- 100 gms french beans (chopped)
- 50 gms baby corn (sliced into 2 pieces)
- 1/4 cup soya chunks (soaked and chopped)
- 1 cup tomato puree
- 1 tbsp dried oregano
- 2 dried red chillies flakes
- 2 tsp dried mixed herbs
- 1/4 tsp freshly ground black pepper (kali mirch) powder
- Salt to taste
- 1 1/2 cups low fat milk
- 1 cup brown rice , washed and soaked for 20 minutes
Method
- Soak the soya chunks in water for 20 minutes and keep them aside.
- Heat olive oil in a non-stick kadhai, add garlic, and saute for about a minute.
- Add the chopped onions and saute till they turn translucent.
- Add the carrots, beans, and baby corn.
- Mix well, and saute for 3 minutes on a medium flame.
- Add the squeezed soya granules, tomato puree along with all the herbs, salt, and pepper.
- Mix well and cook for 3-5 minutes on a low flame.
- Add the milk and rice. Along with this, also add appropriate amounts of water. (approx 1 and a 1/2 glass).
- Mix everything together and cover the kadhai with a lid and cook for 20 minutes or till the rice is done.
- Serve hot.
