Ingredients
- 1 cup quinoa, (rinsed)
- 1 cup mushrooms, (sliced)
- 1 small onion, (finely diced)
- 1 tsp light butter
- 4-5 garlic cloves (minced)
- 1 tsp dried thyme or any other herb
- Salt and black pepper to taste
Method
- Cook quinoa according to package instructions; set aside.
- Melt butter in a large skillet over medium-high heat.
- Add in onion, garlic, mushrooms, and thyme and sauté until tender, about 5 minutes.
- Stir in cooked quinoa, and season with salt and pepper as desired.
